MLB - I've been to home games of Minnesota, Colorado, Kansas City, and the Yankees.  I've likely seen every MLB team oppose them.
NFL - I've been to home games of Minnesota, Denver, Houston, Kansas City, Seattle, and Jacksonville.  I've likely seen every NFL team oppose them.
NBA - I've been to home games of Minnesota and Denver.  I've probably seen about half the NBA teams oppose them.
NHL - I've been to home games of Minnesota and Colorado.  I've maybe seen a quarter of the NHL teams oppose them.
MLS - I've been to home games of Kansas City and Colorado.  I've likely seen every MLS team oppose them.
NCAA - I've been to home games (in basketball and football) of Kansas, Kansas State, Minnesota, Colorado State, Northwestern, and Air Force.  I've also been to the Tangerine Bowl and Gator Bowl a couple of times.  I've maybe seen 25 teams oppose them.

MLB: 29 of 30. The only one I haven't seen is Arizona and I should be able to cross them off the list when they come to Cleveland in August, if the lockout is over by then.

My list is likely incomplete since I don't always remember the visiting team, and some of these sporting events go back as far as 1968.

Teams that I have seen in their home stadium are in Bold.

MLB:  Baltimore, Philadelphia, Washington, Chicago (White Sox), Kansas City, Los Angeles (Angels), Minnesota, New York (Mets), New York (Yankees), St. Louis, San Francisco, Toronto

MiLB:  Bowie Baysox, Delmarva Shorebirds, Columbia Fireflies

NFL:  Miami, Buffalo

USFL:  Tampa Bay Bandits, Birmingham Stallions

CFL:  Baltimore Stallions

NCAA Football:  Florida, Florida State, Miami (FL), Alabama, Akron, Army, Auburn, Cincinnati, East Carolina, Georgia Tech, Houston, Illinois, Iowa, Kent State, Kentucky, Louisville, LSU, Michigan, Mississippi State, New Mexico, North Carolina State, Northern Illinois, Ole Miss, Penn State, Pitt, Rice, South Carolina, Southern Mississippi, SW Louisiana, Temple, Tulsa, Utah, Vanderbilt, West Texas State.  Also saw the Senior Bowl once (I think 1970) which was an All-Star type game; North vs South

I can't begin to name all the opponents, so I'll just list home teams I have seen play

NCAAF:  Ohio State, Indiana, Cincinnati, Michigan State, Cal-Berkeley
NFL: Cincinnati Bengals, Washington Redskins, Pittsburgh Steelers
MLB: Cincinnati Reds, Baltimore Orioles, Colorado Rockies
NHL: Washington Capitals
Minor League Baseball: Florence Freedom (now the Y'Alls)
Minor League Hockey; Cincinnati Stingers (long gone), Cincinnati Cyclones
NBA: Cincinnati Royals (now the Sacramento Kings) - yes, I'm old!

I can't recall all the away teams either, but I have seen:

MLB:
Angels (in Anaheim, Seattle--at the Kingdome and Denver)
Padres (at Qualcomm--even before that when it was Jack Murphy Stadium, at Petco and in Denver--I remember at least one because it was the play-in game for the 2007 playoffs)
Rockies (numerous times)
Royals (in KC)
Cardinals (the last year old Busch Stadium was open--the day after I went to the Royals game)
Mariners (at T-Mobile--when it was Safeco--vs the Red Sox)
Red Sox (twice at Fenway--once vs the Tigers and on Patriot Day 2004 vs the Yankees)

NFL:
LA Rams vs Atlanta Falcons (at LA Coliseum)
Rams vs Saints (preseason--in Anaheim)
Jaguars at Broncos (home wild card playoff game the year the Broncos won Super Bowl XXXII)

NBA:
Lakers at Nuggets

NHL:
Avalanche at Stars
Numerous Avalanche games in Denver

NLL:
Numerous Colorado Mammoth games

Arena Football League:
The first couple of home games of the Colorado Crush

Minor League Baseball:
