The actual map doesn't have this error, but when they're showing things, US 36 near Denver gets upgraded



Also I-37 in Indiana, and I-446 on the "outside" map somewhere in/near Kentucky

This is absolutely fascinating. Thanks for finding it. The area where I grew up has a smaller population than I thought, 913,483, since the metropolitan area is divided up by Interstates.
Interstates clinched: 4, 57, 275 (IN-KY-OH), 465 (IN), 640 (TN), 985
State Interstates clinched: I-26 (TN), I-75 (GA), I-75 (KY), I-75 (TN), I-81 (WV), I-95 (NH)

I wonder how exact this is. How are they able to determine the population so precise as zip codes and other normal population metrics aren't aligned and bordered by highways?

Census data has the ability to go more granular than that. Blocks and block groups are usually bordered by roads and highways.

For example, the census block I live in contains a handful of houses and is bound by residential streets on four sides.
Davenport, IA -> Valparaiso, IN -> Ames, IA -> Orlando, FL -> Gainesville, FL -> Evansville, IN
