I-90. The closest I have ever gotten to it was driving up I-91 to Six Flags New England (my home park I NJ the rides are constantly breaking down). I-90 is the longest interstate highway in the US btw, darn, was hoping that title would go to I-80.

I-781, the only other I haven't been on is I-790.

This doesn't count the hidden Alaska and Puerto Rico Interstates.

Mine is I-77, although there is a possibility it could be I-85 as I haven't tried to remember back to my 1 trip each to Montgomery, AL and Atlanta, GA for any possible concurrencies.  Try to specifically avoid both cities when traveling the Southeast as I have an unreasonable loathing of traffic.

Well, as I never went to the United States, the longest Interstate I haven't been on is also the longest Interstate, period.

I-44.  My cheapies are I-85 (via the Downtown Atlanta Connector concurrency with I-75) and I-84 (via the concurrency with I-15 in Utah).

Longest I haven't been on other than a concurrency is the western I-84.

I have been on I-49 in a concurrency with I-40, so the longest I haven't been on any part of is I-91. Actually could have been on it this summer but we went through Brattleboro on US 5 instead so we could stop for gas and ice cream.

I went to conferences in Reno and SLC in the late 90s, but took a taxi from the airport to the convention center and don't know the route we took in either place.
If you went to downtown SLC, you probably took both I-80 and I-15.

Actually, probably not I-15. The fastest way from the SLC airport to the convention center is almost certainly the 600 and 500 South ramps directly from I-80; that movement does not involve I-15. That interchange was reconfigured around 2000, but I'm fairly sure the actual 15/80 merge point was still beyond the downtown viaducts.

Though unlikely, there's a chance that your taxi took North Temple into the city, which doesn't use any freeways. If you remember taking a freeway, it was almost certainly I-80.

I remembered I had been on I-80 when I went to Reno for a conference, so my answer is now either I-15 (possibility of a very short stint in Salt Lake City) or Western I-84.

Yes

I'm not sure why (for example) I wouldn't count myself being on I-57 when the only parts I've only been on are the concurrencies with I-64 and I-70. It's still marked as I-57 on the BGS and reassurance shields.

It gets a bit more complicated for unsigned routes, like if you've been on I-25 in Colorado, would you count that as being on US 87 as well?
