I could've sworn we had a thread on this before, but I couldn't find one in the forum search feature. A small sample of some of the highway shield themed business marquees I've found:
Market California State Route 25 (near Gilroy, CA)

well there is the interstate 710 line of (kinda crummy) cannabis products:

there is also the "57 express wash" in anaheim off lincoln/sunkist. they use an interstate shield when the 57 nearby is a california state route.

There's a Back 40 Ranch House Grill near Heber City, UT that uses the US Highway shield in their logo (https://goo.gl/maps/BUZ9NPDfbGq7iXJr7). Although "back 40" refers to the 40 acres at the back of a typical homestead farm, the place is in fact on US 40.
Route 11 potato chips (US 11) (more of a logo than a marquee, since it's found on the product inside stores)
Route 110 Auto Sales (https://goo.gl/maps/hZANQMwwa5wf97Zo7), with a US shield instead of a MA shield
Pub 97 (https://goo.gl/maps/3ZK8qfS3nurYmHyb6), also with a US shield
The Barrel 41 brewery (Neenah, WI) has a pretty good I-41 shield in their logo.

Fifty West Brewery, located on US-50 near Cincinnati, has this weird Interstate-shaped sign/logo.

I swear that sometime within the last 5-10 years I saw a place on I-69/US 59 called "I-59 Auto Sales" or something like that (with an associated shield), but now I can't find it. It was somewhere on the I-69 feeder between downtown Houston and Humble, possibly NB if I remember correctly.
All "Phillips 66" gas stations.

It's closed now, but there's a bar near the intersection of US 41/M-28 and M-95 in Koski Corners called Junction 95 Tavern and Grill (https://www.google.com/maps/@46.4982322,-87.9108143,3a,37.5y,38.78h,83.55t/data=!3m6!1e1!3m4!1s7urwPRSLY65OTssI6sTd9Q!2e0!7i13312!8i6656).

it is going to take a lot more than a giant cross and some adopt-a-highway crews to clean up

Rt 51 Brewery in Elkville, IL uses a US 51 shield as their logo, including on their marquee
I'll grab a picture sometime from the sign out front. The logo is visible at their website route51brewery.com and fb page
Pretty sure Old Rt 51 South BBQ in Anna also uses a US 51 shield, colored in interstate shield colors, as its logo
There's a former 7-Eleven on US 460 Business in Petersburg that became a business that had a 460 shield in its marquee.

Have they ever once tried to enforce it? I'd speculate they haven't given how much the Interstate shield appears on businesses and products.

I seem to recall reading the reason AASHTO took out a trademark was they were fearing someone would put up fake Interstate shields to deceive people into taking a route that wasn't an Interstate...for some reason. They wanted to have some sort of legal avenue to stop that from happening. Obviously, that seems to have never come to pass, so AASHTO has never actually enforced the trademark.
I'm thinking that they only enforce it as a way of preventing state and local highway guys from prematurely posting roads as interstates.
Mike
What would be the point of that? There are several segments of 710 in California signed as Interstate that aren't part of the system. Is anyone traveling on Terminal Island or north of I-10 hurt by presence of Interstate shields on those segments?
