Went to the Bay Area last year to work for 3 weeks, drove most of the interstates in the area, but never ventured east towards Sacramento or Stockton to get any part of I-5.

Just a few short months after I made that post, I flew into Sacramento and finally drove on I-5 leaving the airport and went as far south as US 50.  For such a long highway, it's still the only portion of it that I have.

So after recalculating, I-8 is now the longest interstate I have never driven on, followed by I-39, then probably I-82.

If you went to downtown SLC, you probably took both I-80 and I-15.

Actually, probably not I-15. The fastest way from the SLC airport to the convention center is almost certainly the 600 and 500 South ramps directly from I-80; that movement does not involve I-15. That interchange was reconfigured around 2000, but I'm fairly sure the actual 15/80 merge point was still beyond the downtown viaducts.

Though unlikely, there's a chance that your taxi took North Temple into the city, which doesn't use any freeways. If you remember taking a freeway, it was almost certainly I-80.

I remembered I had been on I-80 when I went to Reno for a conference, so my answer is now either I-15 (possibility of a very short stint in Salt Lake City) or Western I-84.

After my 2023 Summer vacation trip, my new answer is I-A1 at 406 miles. For the lower 48, I-8 at 353 miles.

This little exercise has me realizing just how many interstates that I've had the opportunity to be on - and have driven on all of them too. Basically, I've never been on I-19, I-27, I-82, the new I-2 and I-14, the Hawaii Interstates, nor any the Alaska "Interstates" (which I am not counting).

Of all these, I think it's I-27 that is the longest that I haven't been on.  I've driven by the north end of it in Amarillo, just as I've driven by the eastern terminus of I-82 near Hermiston, OR. But neither of those counts.

Disclosure: admittedly not counting 3di's - though I've been on most of them too.

For me it's probably I-82 -- although I drove a large chunk of I-182 a couple of weeks ago.  There aren't many 2di's that I haven't been on  -- I-2, I-41 (although I traveled parts of it before it became I-41), I-86, and I-99 (although I traveled parts of it before it became I-99) are the only ones that come to mind, plus whatever ones North Carolina has added in the past couple of years in the eastern part of the state.

I drove on a bit of I-20 this past January, so I-85 is now my answer  :)

I drove on I-85 back in 2021. My new answer is I-91. I also see that the next-longest highway is I-45, which I also haven't driven on.

Clinched I-PR2 this weekend, so my top five are now:

I-35W (TX) - 86.69 miles
I-196 (MI) - 80.85
I-840 (TN) - 77.75
I-390 (NY) - 76.01
I-380 (IA) - 73.84

I've intersected all of them.

I had been on them the first time I answered, I just overlooked them.  I missed I-80's concurrency with I-15 and a small portion of I-70 that I travelled in Missouri.

The only ones I haven't been on that are longer than 200 miles are I-69 (880 miles) and I-49 (528 miles). In fairness, there are some that I've only driven a few miles of, where they multiplex with another route through some city.

I just realized I never got back to you about this question Sky. The eastern boundary I would say is the Ohio River and Allegheny River to the NY Line then west to Lake Erie. So Erie is in, Buffalo is out and Pittsburgh is borderline.
