If we're strictly talking about single-shot end-to-end trips, I don't know for sure I've ever done that more than once for an Interstate. Of the handful I have, I think the answer would be I-283, but that's so short it's hard not to do.
Mileage-based exit numbering implies the existence of mileage-cringe exit numbering.

For me, it's I-39.  I'm probably up to at least a dozen clinches of this one since I first checked it off in 2003.  I did it once again in the last month.
For a 3di clinch, it's gotta be I-894, though I-535 is up there too.

I clinch I-380, I-205, and I-210 in California basically every time that I drive on them. The same pretty much goes for I-780 and I-505, but I don't drive on them as much.

Considering that I have family (including my then fiance'e, now ex, when I first moved here) in and around Sacramento and live in the Bay Area, my guess is that I have clinched I-205 about over 1000 times over the past 30 years. I am sure that there are people who live near Stockton and work near Livermore who might clinch I-205 as often as 4 to 6 times per day. There may be some delivery drivers who follow that route who may do it more often than that. Commuters who have to drive it every day would clinch it about 500 times per year, even if they don't go home for lunch.

By virtue of being short, I-380 is a relatively easy clinch -AND- has the advantage of being a route that ends basically at SFO, so my guess is that there may be delivery or long-term parking shuttle drivers who clinch it 50ish times per shift. That would be 1000 times per month. It would make my 1000 clinches of I-205 or even a commuter's 10000 clinches over 20 years look like a rare trip.

I could easily clinch I-590 every day - although my default commute does not involve doing it, I could easily incorporate it. I do so probably once a week or so on average. I-390 and I-490 I don't think I've ever clinched in one sitting. I drive different segments of them quite frequently though, so depending on when you start counting, I'll probably clinch I-490 within two weeks and I-390 within a month. I-290, OTOH, I always do in one sitting - some twenty-odd times a year.

Actual clinch volume for all of the above must be well into the hundreds. I don't think there are any other interstates I clinch regularly.

Yikes, I probably didn't need to inundate everyone with so much detail, but not much has changed here. With one big exception: for the first time in my life, I haven't been on I-290 in over a year.

3di: either I-471, I-670 (OH), I-675 (OH) or I-865 for me. I don't know the exact frequency, as I don't go on any of them that much (about 2-3x a year) anyways. The ones I've traveled on the most (and clinched from putting together segments from various trips) include I-275 (OH), I-270 (OH) and I-270 (MO), but those are more difficult to clinch as a full beltway, and I had to go out of my way to get my last untraveled segment of I-275 a couple of months ago.
2di: I have 2 2di clinched (I-71 and I-78), but going to go with I-78 as I think I've been on the entire routing of it more than the Columbus-Cleveland section of I-71. For the one I traveled on the most, I-71 hands down, with I-75, I-74, I-70 and I-64 behind it in that order.

I have but I purposely didn't a couple times just to get the clinch. Now since I have that clinched I use 475 all the time.

I somehow got suckered into taking this job of driving this trailer to and from Florida and I get paid pretty good for it so I don't mind doing it. So this was four trips I drive this trailer down to Florida in January and drive it back to Michigan in April but I fly back in January and fly down in April. Still no I have all of I-75 clinched multiple times as I've driven back and forth to Florida several times.

Honestly I've had I-75 clinch since the late 1990s. Actually in 1995 I went down to spring break I remember and my dad missed the exit for I-475 so I had the stretch in Macon between the both ends of I-475 clinched back then.

I'll add I-85 to an interstate I've been on a number of times, and with finally clinching the northern segment between US-58 and I-95 last year, have clinched every part of that highway from Petersburg to Montgomery.

Have also driven I-37 between Corpus Christi and San Antonio a number of times, and have managed to hit every segment of it as well at some point.
