What I've read about Minnie Pearl's is that there was no consistency from outlet to outlet and that the chain suffered as a result.

They were too focused on growth and not enough on product. Col Sanders perfected his product through years of work. Minnie Pearl's was "we can do that" . She was never really involved with the company, just a figurehead/spokesman.

After Harland Sanders sold KFC, he once famously went to one of their restaurants, sampled the food, and exploded in criticism. I forget everything he said, but he did famously call the mashed potatoes and gravy "sludge."
