Connecticut had at least two of those "cat's cradle" interchanges planned: I-91 at CT 9 (was revised when converted from 3-way to 4-way); and I-291 at CT 9 aka CT 189 (never constructed).

Albuquerque used to have one at I-25 / I-40 with the shorter ramps from I-40 E/B to I-25 N/B and I-40 W/B to I-25 S/B. It was significantly rebuilt and now is this:

The two Kansas examples do have at least one right exit (I-70 W/B and I-635 S/B) but those movements have left entrances.

And another interchange just down the road has a ton of left exits as well. Although I will give them credit here, the I-35/40 duplex east of that interchange keeps the entrances and exits for the routes on the same side of the highway to avoid tones of weaving.

I wouldn't consider most of those "less known". Most of them are splits rather than exits, and at a split there's not necessarily a rule that the numbered route must stay on the left.

I'm not aware of any, but there was a semi-serious proposal about a tollroad that was to tie in around the same location to connect with the airport in '06. But it's been pretty much abandoned since the recession. And Mississippi is terrible with fulfilling proposals anyways, hence why there are so many unfinished parkways in the area.

I tend to have a distaste for left exits, but I can tolerate them as long as they're in one of the following situations:

1. The expressway ramp in question leads to another expressway.  If the turning movement onto this ramp is more popular than the thru movement, I'd even call the choice of a left-hand ramp favorable, not just tolerable.  This applies to onramps, too; if an onramp carries more traffic than the thru movement, there's no problem with putting it on the left (assuming the onramp is a pretty high speed since it carries the most traffic).
2. A relatively slow urban section of freeway with a high concentration of offramps has an offramp on the left, or a series of offramps on the left.  I prefer left-hand offramps to left-hand onramps, because merging into the fast lane is a dangerous proposition, as mentioned by many others in the thread.
3. An offramp to an expressway or other highway that's just beginning.  Junctions like these are just splits in the expressway, where it doesn't really matter which carriageway appears on the left.
4. Express lane ramps, especially to/from other express lanes.

Low-speed offramps and onramps appearing on the left should be highly discouraged.
