From working on my internship, I haven't seen a single 2021 photo, and I've been all over the eastern third of the state.
Meanwhile Spain is still stuck in 2019 in August 2020, and even then only a little area in Guipuscoa by the French border. Everywhere else is still in 2019, before the "End of the World (as we knew it)".

Well, I'm doing the Tour de France route on Street View as of right now, and I'm seeing plenty of 2020 imagery. I've even seen a reference to the coronavirus in Nevers (somewhere in central France).

They might just be slow.
I expected the first imagery of 2020 in Spain to pop up by February (as it has been the case for several years before), but as of now and save a couple streets in Irun there's nothing beyond August 2019 yet. I thought it had to do with the mask thing and that the face blurring algorithm had been in troubles with it, but La France has now plenty of 2020 imagery.
Most of New York (including the city) is still 2019 afaik

I just found some on a rural highway (MS 48 near I-55, to be exact) in southern Mississippi, so it looks like Google has been driving a lot behind the scenes over the past 6 months. It appears their primary goal is to provide better imagery on rural highways where there was only Gen 1 coverage.

I hope they do it in Appalachia. They have better coverage in the slums of Manila and Lima than they do in eastern Kentucky.
Wow, just ran across my first 2021 GSV in France! I did so along D1006 (former N6) in the department no. 73 (Savoie).
The first 2021 street view I found was at the JFK assassination site in Dallas, where it seems like the "X" on the pavement has been repainted (with tape?) recently:
