Is there a personal reason for this choice? I think of that as a functional highway more than a scenic one.
US 202 -- always wanted to try to follow it start to finish.
I-190 NY (just the section between the last exit and the Canadian border)
I-30 -- just a two-mile section outside of Dallas left
I-75 -- decent amount left to clinch in FL and MI, just got the section through Macon, GA that we always bypassed when I was a kid. Been across Alligator Alley, but that was before I-75 was complete.
I-90 -- will get the Skyway soon, but have a lot out west to clinch from SD into WY and then far western MT to WA.

For me, I'd say it depends on the motivation. For strictly TM-style clinching purposes, I'd want to finish off the longer interstates I haven't quite completed like I-10 and I-80, and travel all of one or two of the long US routes like US 1, US 6 or US 20. Then there's finishing the two (of four) state highways that run through my hometown that I have not yet clinched, NY 5 and NY 30.
So for that, here's what I'll go with:
1. I-80 (longest not clinched, since I have I-90)
2. US 1
3. I-10 (only other really coast-to-coast I route)
4. NY 5
5. US 20
Then there are routes I'd like to clinch because I think they're interesting to drive in their own right and/or go to places that are interesting to visit along the way. Limiting to ones I have not already clinched.
1. Iceland 1, the Ring Road (which I won't likely clinch but expect to travel the bulk of next month)
2. Yukon 2/Alaska 5 (need all north/west of Whitehorse)
3. US 550 (need the segment north of Durango/Purgatory)
4. US 101 (a little more than 40% of it to go, scattered up and down the coast)
5. US 93/BC 93
