US 287 northwest of Fort Worth to at least Amarillo.

It really depends what is meant by "updated".

US 93 from the Hoover Dam to Wickenburg
US 60 from Wickenburg to Phoenix (yes, I realize the I-11 route will diverge from existing US 60, almost certainly, and hit I-10 west of Phoenix)

US 20-26 in the Boise area.  A lot of it is still only two lanes.

The ones with signage gaps could really benefit from signage updates.  So, I'd like to nominate US 6 in Colorado for starters.

For Indiana:

US 30 from IN 49 to I-65
US 31 from US 24 to IN 38
US 231 from IN 56 to I-64

US-41, north part of Lake Shore Dr. in Chicago. New bridges, for sure.
And re-route 41 off of Foster Av, a 2 lane residential street. To Hollywood Av, Ridge, Peterson to Lincoln Av.

I'd say US-101 in Oregon.  It's not terrible, but given that it's the only real highway on 300 plus miles of the Oregon coast, there are a lot of areas where some curves could be smoothed out, maybe some extra passing lanes.
