I was recently driving on the New York State Thruway through Utica, when I noticed a very unique freeway setup. The thruway lanes run effectively in the median of the lanes of NY-49 for a few miles. These are *not* a local-express lane system; the freeways are entirely separate routes. Wondering if this sort of setup exists elsewhere? Would also be fine if the lanes are parallel but not nested; I'm pretty sure I've seen that somewhere in the Chicagoland area for a bit, but can't recall exactly where.
I-15 and Legacy Parkway in the SLC area run parallel in the same general ROW for several miles.

Yes, but I-90 is within the EB and WB lanes of NY 49 and maybe I-790 depending on what source one uses... :D

As it goes through Minneapolis, 35W parallels I-94 for about a mile or so before turning north again to cross the river. A little to the south, I believe it does the same at the "Crosstown Commons" interchange with MN 62 - although I'm pretty sure that, before it was reconstructed, it used to actually merge on, often creating a traffic bottleneck. (At least, that's what I remember from numerous trips up to Minnesota; if anyone can set the record straight on thag matter, that would be great.)

I'd still count the part of the Legacy Parkway and I-15 that are between Farmington and Centerville (though they are separated by railway tracks). That's quite a wide corridor!
A couple examples I'm familiar with:
- TX 288 runs inside I-69/US 59 in downtown Houston for about a mile. 288 just serves as a glorified ramp to I-45 through here.
- I-10 and I-45 are intertwined just a few miles away from the last example. Interestingly, the middle two carriageways are I-10 WB and I-45 SB. I'm not aware of any concurrencies like this where the middle two carriageways don't belong to the same highway.
- I-69/US 59 runs alongside the Westpark Tollway on the western side of Houston for a couple miles.
- I'm not sure whether this counts or not, but the ramps for US 290 at the I-10/I-610/US 290 conglomeration in Houston remain separate from 610 for a couple miles. I was under the impression that these ramps were the mainline US 290 (and that US 290 ended at I-10), but I'm probably wrong. Still interesting though.
I-91 runs in between lanes of CT 15 in Meriden, CT for about a mile.
The best example of this is the Dulles Airport Access Road freeway, which runs inside the lanes of the Dulles Toll Road (VA-267).
US 212's easternmost 3/4 mile is bracketed by MN 62 on either side in Edina, MN.
Half example, but the eastbound lanes of I-94 run parallel to I-694 for a mile after their Brooklyn Center split before turning south toward Minneapolis.
I dont know if these two from the Detroit area would fit, There is I-696 inside the lanes of the Lodge freeway at Telegraph road, and Highway 401 inside the EC Row expressway in Windsor going to the soon to be completed Gowie Howe bridge.

The 2 Chicagoland examples of parallel "Freeways" involve the Tollways
I-290/Eisenhower Expressway and I-294/Tri-State Tollway run parallel for almost 2 miles near Elmhurst IL/just north of the I-88/I-290/I-294 interchange
I-88/Reagan Tollway and I-355/Veterans Memorial Tollway run parallel for about 1-1.5 mile near Downers Grove, IL. Supposedly part of the reason this was done when 355 was built, was due to the adjacent Morton Arboretum, so ISTHA built 355 alongside 88 on that existing ROW at the edge of the arboretum. There are 3 concrete medians separating the 4 carriageways, but the two are side-by-side, not one inside the other
Once the "North Split" is done in Downtown Indianapolis, will I-65/I-70 count here? Not sure if INDOT is planning to keep the carriageways entirely independent between the North and South Splits, but both will ultimately enter and leave from the same side
A couple of parallel highways...
I-95 and the Florida's Turnpike from Jupiter to near Stuart.
I-295 and the NJTP from Tavistock to near Willingboro.
Also, for a very short distance (and for a short amount of time–about 5-6 years), I-81 is sandwiched between the lanes of I-690 in Syracuse.
It's really more of an express-local set up, but I-29 and I-80 just across the river from Omaha technically run on four separate roadways for a small bit.

I-85 and GA 13 in Atlanta run parallel to each other from GA 400 to I-75, and this is noteworthy in that the latter freeway was the original I-85.
Also, I-95 and I-895 in Baltimore parallel each other for a short distance near the former's toll plaza past the Fort McHenry Tunnel.

I-90 and I-271 in Cleveland have a similar local-express setup. I-271 exits onto the express lanes while I-90 continues onto the "local" lanes before I-90 exits to head toward downtown Cleveland.
I-271 and I-480 have about a where they do this as well. I-480 EB exits the SB I-271 mainline and runs as the outside lanes for about two miles, and I-480 WB mirrors that with NB I-271 until they eventually merge.
It's really a slightly convoluted interchange more than a case of two freeways running parallel to each other, but the odd layout of I-85 and US-74 near Kings Mountain, North Carolina (https://www.google.com/maps/@35.2484523,-81.3025548,15.88z), comes to mind. Eastbound US-74 runs between I-85's two carriageways, while southbound I-85 runs between US-74's two carriageways.
There's also this just south of Jackson MS, where US-51 goes in between I-20 and I-55. On the southern half, I-20 and I-55 are also separate for a while, but not on the northern half:

One that was built in California, but was never used or signed as such: what was intended to be the I-80/I-880 split in Sacramento, but for the cancellation of the I-80 realignment in North Sacramento (and redirection of funds to SacRT light rail) in 1979.
The end result is current I-80 (along former 880) on two outer carriageways, surrounding the never-used realignment carriageway for 80 that now houses 3 light rail stations (Roseville Road, Watt/I-80 West, Watt/I-80) for about a mile, with at least one or two exits directly serving those stations.

Amsterdam Schiphol might have one as landing and departing flights have to taxi over two different freeways during the 20 minute long taxiing.
The Garden State Parkway runs inside the median of US 9 in Woodbridge, NJ.for about 1 mile. Although US 9 is a limited access expressway and not full freeway due to businesses along it, it comes close to the OP here.
I-85 is inside I-285 for a couple of miles immediately SW of Atlanta near the airport.
Does El Monte Busway on I-10 in the Los Angeles area count.
