I was looking at the I-85 / I-285 interchange in Georgia northeast of Atlanta, and it jumped out as extraordinarily complex:

Then, I turned off the labels and made this picture, and it lost a bit of that, but still, I was curious as to the most complex interchanges, of whatever sort you might find interesting, that you know of.
A classic Spaghetti Junction in Downtown East Minneapolis (I-35W/I-94/TH 55 [Hiawatha Ave]/several city streets)

I would say the Golden Glades interchange in Florida.

I once read a fairly apt description of New Jersey interchange design: Start with a relatively common design and then just tack on as many extra ramps as you require to accomplish your goal. The interchange between the Turnpike, I-287, and NJ-440 is a pretty good example of that because you can see the two relatively common designs quite easily.
In my working days, I had to fly into Newark once or twice a year. This may not be the most complex, but it messed me up more than once.

I-96/I-275/I-696/M-5 in Novi and Farmington Hills (https://goo.gl/maps/m8qfAr7L2mGTQMak7). This started as a simple half interchange (westbound entry, eastbound exit) between I-96 to the west and I-696 and I-96 (now M-5) to the east, which still exists in the center of the whole thing. More ramps were added as the other freeways were built; first I-275 to the south in 1976 and then M-5 to the north in 1994.
For an interchange between two run-of-the-mill freeways, the I-77/US 30 interchange in Canton, OH is fairly complex:

The I-66/I-495 was already somewhat complicated after the 495 express lanes were constructed a decade ago, but has reached another level now (https://maps.app.goo.gl/FV8i2AMjnqf8psVt9?g_st=ic) with the newly-built 66 express lanes. Ramps upon ramps to provide every possible transition from general lanes to toll lanes and vice versa on both routes.

That's one of the biggest things hat I have always disliked about New Jersey, there are often few or no facilities for legal non-motorized local access to or between properties.

US 101 at Cesar Chávez/Potrero/Bayshore Blvd is pretty complex.
The Newhall Interchange in Sylmar, CA is where I-5, CA-14 and I-210 is complex on its own level because theres Truck Lanes included.

The I-35E/I-635 interchange between Dallas and Carrollton looks like ramps going all over the place for a single interchange between two intersecting interstate highways; same goes for I-35W/I-820 north of Ft. Worth. The combination of main lanes, express lanes, and HOV lanes make them look quite complicated to tell where each ramp goes.
I-15 at I-80 east, 201 Freeway, 2100 South and West Temple in SLC is quite an impressive spaghetti bowl.

That's just three interchanges. The MacArthur Maze is a better example of what you're trying to show as complex, though.

What a terrible place to try to get...sleep? You know, the daily event animals and humans perform when they can't stay awake for over 18 hours at a time before making terrible decisions.
