That link goes to the Leftover Crack cover of Down Under (i.e., the link's there twice). That cover is actually pretty damn good, as is the Black Betty cover by The Melvins.

Weezer's cover of Africa (https://www.youtube.com/watch?v=QaKcTVP8IJs) is quite possibly my favorite cover song of all time, and it's hilarious that it started as a Twitter meme. I also enjoyed Luke Combs' cover of Fast Car by Tracy Chapman (https://www.youtube.com/watch?v=Fr7oYjnt3bM&list=RDFr7oYjnt3bM&start_radio=1), and I loved it when they performed the song together (https://www.youtube.com/watch?v=pLfH9HSUyf4&list=RDpLfH9HSUyf4&start_radio=1) at the Grammys.

Of course, Whitney Houston's version of I Will Always Love You is iconic and probably the single greatest cover of all time.

Eyal Amir (Project RnL) did a proggy cover of Taylor Swift's "22":

Might as well read the threads that already exist about cover songs:
