Aren't there tunnels that have guide signs separated into several, one per line, that look like one sign when seen together?

Yes--the N4 Schaffhausen tunnels have signing which works on this principle.

I take issue with their use of the term "stereoscopic".

There's a company that uses this principle for fake 3d signs on sports broadcasts:

I see it most often during European soccer matches, but I've seen them on some other sports broadcasts also.

Yes, anamorphosis is the more apposite term in this case.

I couldn't find any still photos either (and don't have any in my personal stash), but Google StreetView now has coverage of the tunnels.  Here is an image showing the northbound anamorphic signs for the Schaffhausen-Nord interchange in Fäsenstaubtunnel (the northern of the two tunnels which carry the N4 through Schaffhausen):

These signs are directly opposite other anamorphic signs, facing southbound traffic, which are for Schaffhausen-Süd, Neuhausen am Rheinfall, Kreuzlingen, and the Rheinfall itself (in 500 m):

These are all internally illuminated signs and use the old VSS-Schriften, although the northbound signs seem to have been upgraded to incorporate junction numbers, which were introduced in Switzerland around 2002 or 2003 at roughly the same time the present ASTRA-Frutiger traffic signing typefaces were rolled out.
