In Tennessee, I-40 from the Tennessee River crossing all the way to the NC line is very interesting.  So is most of I-65 and any part of I-75 north of I-40.  The rest of TN's interstates are decent, but I-40 in West TN and parts of I-24, I-75, and I-81 can be snoozefests.
