That doesn't stop people from avoiding restaurant lettuce of course.  I've got a friend who works at a tex-mex fast food chain around here, and they get their lettuce from a farm in the area, but sales are way down anyway because apparently people think restaurants have just decided to keep selling contaminated food.

And it's not like you can't just ask them to hold the lettuce.

I'm trying to remember if I've ever seen lettuce on tacos south of the border, and it's possible that I never have.  I've eaten plenty of restaurant tacos with a bit of lettuce on the side as a basic salad, but I don't think I've ever seen it on top of the taco itself.

My wife says she can't remember ever having lettuce in Mexican tacos.  Cabbage is the most similar equivalent ingredient.

My grandmother's mother and grandmother were from Mexico.  What she called tacos were what we (most Americans) call burritos.  She made breakfast tacos, which wouldn't have vegetables, and dinner tacos with ground beef in spicy stew cooked down from chopped canned tomatoes.  She never added raw vegetables.  Her cooking was more Mexican than Taco Bell, but I don't know how genuine it was, as I've never been to Mexico.  She also never added cheese, which my version always has, or sour cream, which I usually use, or refried beans, which I sometimes use.  My version is also more dry and less messy.

A local Mexican restaurant has something they call tacos campechanos.  It includes soft corn tortillas and a meat and vegetable mix on top of them.  I fold them myself.  I think they make them that way because with soft tortillas they won't stay shaped on a plate.  I like the meat they use, but I mostly like that it's one of the few things that doesn't have beans and rice, which I don't care for.

That just means tacos in the style of Campeche, which is a state (and city) north of Guatemala.

That is exactly what I wanted to know.  I am a descendant of Mexicans who knows little of my heritage. To me, a United State American, there had to be a reason that the tacos weren't folded when the plate was brought, but maybe to someone else that reason is obvious.  It reminds me of a physicist whose videos I've been watching who suggested that maybe we're asking the wrong question as to why things exist, and maybe instead of assuming that nothing is the default and so if something exists we should ask why, perhaps it may be that the default condition, with no god or creator, is for things to exist, and that this is the standard outcome, unless there's some god to prevent it, and that maybe there should be some shit rather than none, unless an all mighty creator decides otherwise.  It stretches the mind, but it's a beautiful thought.

I should note that taquitos are served already rolled up.  This is because they're lightly fried, so they get rolled up before frying.  With larger tortillas, these often go by the name flautas instead, but it's the same basic food item.

My wife saw something online that purported to be video of a grocery store worker taking Taylor Farms lettuce out of the bag and repackaging it in another bag that didn't have that company's name on it. She didn't know where it was supposedly filmed. I have no idea whether it was real or just scare-mongering, but it wouldn't surprise me either way.

Of course you're OK.  This outbreak is way less of a risk than normal everyday foodborne illness.  So far in the USA this year, there have been about 300 hospitalizations and zero deaths linked to the cyclospora outbreak.  For comparison, in a typical year there are about 100,000 hospitalizations and 900 deaths linked to good old foodborne norovirus.  Sure, this outbreak causes worse symptoms that last longer, but your chances of getting it are pretty trivial.

Besides which, you probably wouldn't be showing symptoms this soon anyway.  Cyclospora can't just proliferate in your gut the way norovirus does:  they can only thrive inside the actual cells of your intestinal lining, and it typically takes a week or two for the fun to begin.

Large corporations understand this.  A small mom 'n pop store might think the switcheroo was a good way to save a penny, but that's still unlikely.
