Colorado Springs area tho I can't come up with anything specific
Powers has some up north, though maybe that is more of a freeway. there is also some on SR 115. Also, Austin Bluffs and Union, as well as Academy and the road that goes to the airport. Also, Platte has some.
I build roads on Minecraft. Like, really good roads.
Interstates traveled:
4/5/10*/11**/12**/15/25*/29*/35(E/W[TX])/40*/44**/49(LA**)/55*/64**/65/66*/70°/71*76(PA*,CO*)/78*°/80*/95°/99(PA**,NY**)

*/** indicates a terminus/termini being traveled
° Indicates a gap (I.E Breezwood, PA.)

Lorne Street/RR 55 and Big Nickel Road/RR 34 in Sudbury, Ontario.
So many miles and so many roads

Saw this mentioned in the Freeways of Los Angeles facebook group and somehow I hadn't noticed it before:

Temple Street at Figueroa Street (former US 6/Route 11) in Los Angeles, notable because it is very close to the Four-Level Interchange:

Grand Av in Phoenix has a lot of bizarre interchanges. They used to all be standard 6 ways before most of them were bridged (or tunneled) in the 2000s. One 6 way still remains (19/mcdowell/grand). Most of them have already been mentioned here. I couldn't find any mention of Bell/Grand in Surprise, however, which is just a standard left exit.

Two more, but in Anaheim, CF. Esperanza (Orangethorpe) at Fairmont Blvd and Imperial Highway. Not sure what this kind of interchange is called, where two surface streets bridge over each other with a connecting road on the side. There is also a full diamond interchange further north on Imperial Highway, although this stretch is technically a freeway, even if only for a couple miles, though it is not signed as such.

https://www.google.com/maps/@33.8645295,-117.7852344,910m/data=!3m1!1e3?entry=ttu&g_ep=EgoyMDI1MTIwOS4wIKXMDSoASAFQAw%3D%3D

And then there's this ancient half diamond on the border of Pasadena and Altadena, CF at Oak Grove Dr. This used to be a freeway many decades ago but was since converted into a surface street.

And here's a good article about this bizarre interchange: https://www.socalregion.com/highways/socal_unsigned/foothill_fwy/

You can add a new interchange between conventionnal roads who replaced recently an intersection at the junction of PQ-139 and PQ-112 at Granby.

There's also an interchange on PQ-161 north of Lac-Mégantic.

Both of those feel like they were done because they wanted to grade-separate the crossings over the rail line there, but needed to retain the connectivity with the intersecting street right next to the line.
May or may not be batticorn.

I also collect traffic lights, road signs, fans, and railroad crossing equipment.

In West Lafayette, Indiana, how about:

River Road and Union Street

Sagamore Parkway and Happy Hollow/Soldiers Home Road

The split between Sagamore Parkway and Northwestern Avenue

Across the Wabash River in Lafayette, Union and Salem Streets appear to have an interesting interchange with Third, Fourth, and Canal Streets.

Yeah that checks out. Upon further inspection, there are a few more such "interchanges" along that street, and a few grade crossings as well on more minor streets.

Out of curiosity, do you happen to own a boat?
No, but my dad does, and I grew up around boats and have an affinity for numbers, license plates included. I do also like to be "different" in the absolute worst ways possible, even if that includes using vessel registration state abbreviations rather than USPS state abbreviations. I'm aware that some of the discrepancies are ambiguous, but CF is not one of them.
(Upon further research, boat reg abbrevs predate USPS by 5 years)

I just ran across this one in Arcadia, MO, which is basically a conventional road version of a trumpet interchange.

Oops.  Just like the prior post, that is the result of a railroad grade separation.

Not sure if anybody's brought up the State Line Avenue at 3rd/4th Street interchange in Texarkana yet, I'm not going to look through 20 pages of this thread to find it but I think it's pretty cool.
