NJ, off the top of my head (so pardon any errors):
5 - Bergen (original 5 followed 46 to Passaic, Essex, Morris)
13 - Ocean
17 - Bergen (multi-state route)
19 - Passaic (originally proposed as 20)
20 - Passaic (also in Bergen until 1988)
26 - Middlesex (followed 1 to Mercer until 1953)
32 - Middlesex
33 Business - Monmouth
36 - Monmouth
37 - Ocean (once proposed as freeway to Mercer)
48 - Salem (followed 40 to Atlantic until 1953)
53 - Morris
59 - Union
62 - Passaic
63 - Bergen
64 - Mercer
66 - Monmouth
67 - Bergen
68 - Burlington
75 (unbuilt) - Essex
I-76 - Camden
79 - Monmouth
82 - Union
83 - Cape May
87 - Atlantic (originally proposed with a bridge to Ocean)
88 - Ocean
91 - Middlesex
93 - Bergen
***
I-278 - Union
284 - Sussex
324 - Gloucester
439 - Union
445X (Brigantine Connector) - Atlantic
446, 446S (Palisades Parkway) - Bergen
495 (already mentioned) - Hudson

*** Most of the 1xx routes are in a single county. In fact, here are the ones in multiple counties: 124, US 130, 158 (former), 159, 167, 168, 173, 181, 183, I-195.
Not to nitpick, but you did forget NJ 12 in Hunterdon.

Highway 30 is the only one I can think of off hand for Wisconsin.

We can also add WI 213.

Sanctimoniously

Just in Ouachita Parish, I can think of. . .

LA 594
LA 616
LA 617
LA 837
LA 838
LA 840-1
LA 840-6
LA 841
LA 3033

There are probably even more than that.

Minnesota has quite a few in the Cities area from what I can recall.
At one time (before 1980s) that would have been accurate. With turnbacks of trunk highways that were mostly city streets, there are only a few in the Twin Cities area.
100 (Hennepin)
121 (the short ramp from I-35W to Lyndale at the 62 interchange - Hennepin)
243 (Washington)
244 (Washington)
97 (Washington)
280 (Ramsey)
62 (Hennepin)
110 (Dakota)
252 (Hennepin
51 (Ramsey)
50 (Dakota)

My "only a few" list grew as I actually looked at a map. Outstate you would have the remaining 2xx and 3xx routes that were established to serve state facilities. If I had to guess the longest single-county route in Minnesota I would probably look for a large county by area like St. Louis and speculate it may be MN-169.

Actually MN 169 crosses briefly into Lake County, according to http://www.dot.state.mn.us/maps/cadd/county/lake3.pdf, so I'm not sure what the longest single-county route in MN would be...

I wouldn't even attempt this for Kentucky, as most of the four-digit routes and many of the three-digit routes would fit this category.

Offhand I can think of a few Texas examples... severely incomplete list follows:

  • SH 10 and SH 26 in Tarrant Co.
  • SH 57 in Smith Co.
  • SH 151 and SH 218 in Bexar Co.
  • SH 93 in Bowie Co.
  • SH 40 in Brazos Co.
  • Toll SH 255 in Webb Co.
Not sure whether most of these are in the more urban areas or if those are just the examples that came to my mind more readily. There are a few in relatively less populated areas, i.e., SH 51 in Hansford Co., but as expected many seem to connect two county seats.

Oh, of course, can't forget SH 165 in Travis Co. :)
I'd like to add TX-286 and TX-358 in Nueces County to that.

Even More California:

Maryland has tons and tons of them.  I'm pretty sure I can come up with at least fifteen or twenty in Montgomery County alone.

Many small state highways in Montgomery County  were decommissioned in the late 1990's in exchange for SHA taking-over what is now Md. 119, the Great Seneca Highway.

Here are some (several "little" ones omitted):

Highway 30 is the only one I can think of off hand for Wisconsin. Minnesota has quite a few in the Cities area from what I can recall.

Both WI 15 and WI 125 are entirely in Outagamie County.

Also, WI 119, WI 241 and WI 341 are entirely in Milwaukee County.

WI 105 is entirely in Douglas County.

WI 172 is entirely in Brown County.

These are just a few.

--------------

One that Big John missed - WI 180 is entirely in Marinette County.

I was thinking that WI 110 was entirely in Waupaca County, but then I remembered that its northernmost couple of blocks are in Shawano County.

How many state routes are entirely within Cherry Co, NE?

Being it is mostly ranch land in Cherry County, the only state highways which exist solely in Cherry County are S-16A, S-16B, and S-16F.

As for Nebraska in general, most of the spurs and links are in one county.  As for numbered highways, the only ones I can think of offhand are  1 (Cass County), 110 (Dakota County) and 370 (Sarpy County).  Some of the highways split into multiple parts have parts entirely in one county (the far eastern part of 66 is entirely in Cass County), but the highway as a whole is not.
