IMO I-87 through the Adirondacks is overrated.  If you want to see the Adirondacks, take NY 73 or NY 74, or spend the money to head up NY 431 to the Whiteface Mountain Summit.  You'll get a much nicer view (albeit not at 65 mph).

Interstate 68, just the entire length, from the hill cut at the eastern end, to the 2800ft mountains, it is all beautiful, you get to see some of the most varied terrain possible on a short interstate.

So uh, why not have it be a second lane at all times? Think that might help with the traffic tie-ups?

Not many traffic tie ups on that stretch anymore. The median divider significantly cut down on accidents. The reason they didn't use it as a full time second lane was that they'd still need to add a shoulder, further widening the road. Almost all of the road is on dirt fill through the Everglades and it would have significantly increased the cost to have to add more dirt to fill in more swamp.

No one's mentioned the PCH? Million Dollar Highway? Utah 12?

I'd also submit U.S. 50 through Nevada (the loneliest road), I-84/U.S. 30 through the Columbia River Gorge, CA 49, MA 2 (2A where applicable for the real experience), and I'm partial to U.S. 12 through the Palouse in Washington, which IMO is some of the most underrated country in this nation.
