What do you like on your omelette?

I think goat cheese is pretty solid. If not that, then cheddar cheese works well too. Also spinach, mushroom, bacon bits.

And my omelettes have to be at least 3 eggs, 2 eggs is too small.

I absolutely love omelettes, there truly are near-limitless possibilities as far as ingredients go.

In the omelettes I've eaten, I typically fancy ingredients such as cheese, spinach, ham, mushrooms, black olives, etc.

It's been too long since I've been to IHOP, I always loved getting the custom-made omelettes there.

My favorite was always the Italian Omelette.  Quite a few diners serve them back east.  But here in the boring region I live in, the one restaurant I could find that had them, closed in recent years.

IHOP used to have a black bean omelette that I liked.  Funny how my favorite food choices from restaurants just tend to up and disappear.

A good Spanish omelette has eggs, potatoes and (this is a matter of dispute) onion. And nothing else. I've seen some terrorist attacks to that, what an eyesore they were.
