VA 162 is the only one I can think of off the top of my head.

Southern MN 101 ends at the Scott county line; there's a gap where southern 101 was a continuous route between the 212 freeway and MN 5, which is now Carver county 101. Now, the "middle segment" begins at MN 5 and ends before it curves and becomes Townline Road, so there's no cheating by saying the southbound lanes travel through Hennepin county for a while before it ends. Thus, two out of the three MN 101's are completely intracounty, within the same county (Carver County).

Here is the list for Rhode Island.  A state where counties are pretty much non-existant anyway.

Idaho does not have a lot of state highways, but many of those are contained in one county.

SH-4 - Shoshone
SH-5 - Benewah
SH-7 - Clearwater
SH-9 - Latah
SH-13 - Idaho
SH-14 - Idaho
SH-29 - Lemhi
SH-37 - Power
SH-38 - Oneida
SH-40 - Bannock
SH-43 - Bonneville
SH-47 - Fremont
SH-53 - Kootenai
SH-54 - Kootenai
SH-57 - Bonner
SH-58 - Kootenai
SH-60 - Benewah
SH-61 - Bear Lake
SH-62 - Lewis
SH-64 - Lewis (3 miles of route is gravel, hugging the side of a mountain, barely one lane, no guardrails)
SH-66 - Latah
SH-69 - Ada
SH-72 - Payette
SH-74 - Twin Falls
SH-77 - Cassia
SH-79 - Jerome
SH-87 - Fremont
SH-97 - Harrison
SH-99 - Latah
SH-128 - Nez Perce
SH-200 - Bonner

Probably would have been easier to list the routes that entered more than one county, but where is the fun in that.

Medina County, OH (my old stompin' ground) is one of dozens of counties in Ohio with one-county state highways.

BTW, SR 421 and SR 606 are the ones in Medina Co.

Another one I can think of is WI 116, entirely in Winnebago County.

The now decommissioned WI 150 was also entirely in Winnebago County.

A couple of more for the list for within Wisconsin:

MN 23
I-535
(both entirely within Douglas County)

Surprised nobody has mentioned DC-295 yet.

Doesn't look like anyone has done Washington yet.  Unfortunately, I'm only really familiar with Puget Sound, and I'm too lazy to look at a map.

Whatcom: 539, 542, 543, 544, 546, 547, 548
Skagit: 534, 536, 538
Snohomish: 92, 96, 204, 524, 526, 528, 531
King: 18, 164, 169, 181, 513, 515, 516, 518, 519, 520, 523, 599, 908*
Pierce: 161, 163**, 165, 512, 702, 704, I-705, 706

*Apparently, SR 908 died in 2010, but it's still on the BGSs on I-405 (haven't been on the route itself recently).  Likewise, SR 527 is now technically only in Snohomish County, but it's still signed into downtown Bothell in King County.

Both enter Minnesota (Especially MN-23 since it's from MN), and thus enter more than one county.

BTW: I-97 :bigass:
